Prez Sez

We had our Budget and Events meeting in mid-January. Several of our members have stepped up to lead rides, play days and camp outs. Some we have done before and some are new adventures! Let’s all show them our support and come out to ride or offer to help. Check out the events inside this issue of the Hoofbeats.

We are having cold but sunny days, and hopefully we will get some rain soon. But, in the meantime, go out and enjoy these ridable days with your trusted pony!

Happy Trails!

Mediterranean Salmon in Foil

This is a fl avorful and easy-to-make meal for a summer evening. Light on calories and big on taste, it is one of my favorites.
Bonus: If the salmon is getting a bit old, the ingredients will mask the slight fishiness.

PREP TIME: 5 MINUTES
COOK TIME: 25 MINUTES
SERVINGS: 4 SERVINGS
CALORIES: 395
COURTESY OF THE SEASONED MOM

INGREDIENTS

• 4 salmon fi llets about 6 oz each
• ½ cup prepared pesto• 1 onion chopped
• 1 pint grape tomatoes halved
• ½ cup crumbled feta cheese
• 2 tbsp. butter
• 1 tsp. (or more) lemon juice

If cooking for one or two persons, adjust the amount of ingredients accordingly.
Tip: Before leaving for your trip, place chopped onion, halved cherry tomatoes, and feta cheese into separate baggies at home. Bring along a small jar of homemade or store-bought pesto.

INSTRUCTIONS

• Melt butter in a small pan. Add lemon juice to taste.

• Place each salmon fillet on top of a piece of aluminum foil. Brush each fillet with the lemon butter sauce. Then top the fillets with about 2 tablespoons pesto, ¼ cup of onion, ¼ of the tomatoes, and approximately 2 tablespoons of feta cheese. There’s no need to measure the ingredients—just use as much or as little as you like!

• Seal the foil packets by folding them over the fish and pinching tightly to close.

• If camping, you can use a camp oven, otherwise place the foil packets on a grill over a fire. If using a camp stove, use a pan or griddle to cook the fish in the foil packets.

• Fish is done when it flakes easily with a fork.

Note that while satisfying, this is a light meal. To add bulk to the meal, stir up a side of potatoes, or prepare a pot of rice or pasta.
